About this place
Set quietly in a basement in Hatchobori, Hokuto is a dedicated specialist that designs its courses around shellfish from start to finish. A meal begins with small seasonal bites, moves on to sashimi showcasing fresh textures, and continues into aromatic grilled and steamed plates, with varying degrees of heat applied to highlight each shell's natural sweetness and bite. Dishes such as chawanmushi, suffused with the concentrated depth of shellfish stock, leave an equally lasting impression on the table.
The dining options range from the light Ao Course to the classic seven-dish Umi Course, as well as the Nami Course, which encompasses fried items and simmered preparations. Advance-booking specialities take the focus even further: hot pots with raw oysters dipped into rich broth, hard clam hot pots, live shellfish shabu-shabu, and abalone-centric feasts, where the concentrated flavours left in the pot are ultimately captured down to the final rice porridge or noodles.
To accompany the cooking, Hokuto offers around 20 varieties of sake selected by a certified kikisake-shi (sake sommelier), each poured into distinct drinkware tailored to the bottle. With both counter and table seating in an unhurried setting, the dining room suits an evening meant to be savoured slowly; reservations are recommended before visiting.
